Dinner Party for 4 People. Quick Pumpkin Soup is very easy and can be prepared well in advance. Zucchini and Carrot Bake is another easy to prepare dish. Prepare it in advance also. Main course is Oriental Marinated Turkey, a hint of chinese flavourings make this roast a special dish. Mixed Berry Crumble make a sweet finish to a wonderful dinner.
Quick Pumpkin Soup
1 tablespoon olive oil
2 onion, finely chopped
1 clove garlic, crushed
1 teaspoon honey
1 ½ kg butternut pumpkin, peeled and chopped
2 cups chicken stock
½ teaspoon ground nutmeg
½ cup coconut cream
toasted damper to serve.
Combine oil, honey, onion, and garlic in a large microwave safe bowl and cook uncovered on high power for 2 or 3 minutes. Add pumpkin and stock, cover and cook for 18 to 20 minutes on high. Set aside for 20 minutes.
Blend or process soup until smooth. Stir in nutmeg and salt and pepper. Return to microwave, heat, covered for 3 to 4 minutes on medium-high, stirring every minute until heated through. Ladle into bowls, swirl through coconut cream and serve with toasted damper.
Zucchini and Carrot Bake
2 carrots, grated
1 brown onion, halved and sliced thinly
1 cup self raising flour, sifted
5 eggs, lightly beaten
½ cup light extra virgin olive oil
1 cup grated tasty cheese
8 small trussed tomatoes to serve
Preheat oven to 180C. Grease a 22cm cake pan.
Combine zucchini, carrot, and onion in a bowl. Add flour, eggs, oil, and cheese. Season and stir until well combined.
Pour mixture into cake pan and bake for 50 minutes, or until a skewer inserted into the centre comes out clean.
Place tomatoes onto a lined baking tray and spray with oil. Place tomatoes into the oven over the dish for the last 15 minutes of cooking.
Oriental Marinated Turkey
1.8kg turkey breast thawed
½ cup soy sauce
¼ cup honey
2 tablespoons sweet chilli sauce
2 cloves garlic, crushed
1 ½ teaspoons chinese 5 spice powder
cooked hokkien noodles to serve
steamed choy sum to serve
Place thawed turkey breasts into a large ceramic dish. Combine soy, honey, sweet chilli sauce, garlic, and chinese 5 spice powder. Pour over turkey breast, cover, and place in a refrigerator to marinate overnight.
Preheat oven to 180C. Place marinated turkey into a large ceramic ovenproof dish lined with baking paper. Pour marinade over turkey. Bake for 1 hour and 45 minutes, basting every 30 minutes.
Remove turkey to a plate, cover with foil and allow to stand for 15 minutes before slicing. Serve slices of turkey on hokkien noodles with steamed choy sum.
Mixed Berry Crumble
¾ cup self raising flour
1 teaspoon ground cardamon
125g butter, cubed, chilled
½ cup rolled oats
1 ¼ cups caster sugar
¼ cup slithered almonds
½ cup water
2 teaspoons rosewater essence
500g mixed berries.
Sift flour and cardamon into a bowl. Rub in butter until it resembles breadcrumbs. Stir in rolled oats, ¼ cup caster sugar, and almonds. Cover and place in the fridge.
Preheat oven to 180C. Heat remaining sugar, rosewater, and water in a saucepan over medium heat. Cook stirring and bring to the boil. Reduce heat and simmer for 7 minutes or until syrup reduces and thickens.
Stir berries through syrup and spoon into 4 x ¾ cup capacity ovenproof ramekin dishes. Sprinkle with crumble mixture. Bake for 25 minutes or until golden in colour.
