Ingredients

½ cup mashed potato

1 inch oil for frying

5 tsp yeast in 1 cup warm milk and a pinch of sugar

2 cups plain flour

½ tsp salt

¼ cup sugar

2 tbs vegetable oil

Place milk in a bowl, add yeast and a teaspoon of sugar. Allow to stand for 15 minutes.

Method

Mix dry ingredients and potato together, then add milk mixture and oil to form a soft dough. Let stand for 10 minutes. Roll out to half inch thick and cut donut shape. We use a 9cm scone cutter, and then cut the hole with a 2cm cutter. Roll the off-cuts and roll again until you have used all the dough.

Heat oil in pan until moderately hot and fry until golden brown
